With sheet pan dinners, you’ll only need 1 baking sheet and your creativity. Load it up with your favorite meat, marinades/sauces, veggies and spices and throw it in the oven. You can do the same thing in a frying pan and let it cook while you set the table.

One pan dinners are great because you throw all your ingredients in and let it all cook and intertwine with each others’ flavors. Tonight we decided to combine the robust flavors of our sweet Italian sausages with some with some gentler Italian flavors. Why sweet sausages when we love the pain of spice? They’re less carby than spicy Italian sausages. We eat these a lot and carbs can add up. We prefer buying the low carb sausages and spicing them up ourselves!
This super easy low carb dinner takes one pan and feeds lots of people. It’s also quite versatile. You can use any veggies you like but we chose to use zucchini, carrot and daikon radish. We chopped these up but left them pretty chunky. The carrot and zucchini roasted very nicely and the daikon radish actually resembles cooked potato in texture. As for the sauce, we decided to use a mix of olive oil and balsamic vinegar with minced ginger to give it a little kick.
There are lots of versions of it circulating around the internet but they all have an Asian spin to them. Best of all, the entire dish is very low carb. Our version turned out at about 4 net carbs per serving. Not too shabby! Our nutritional facts were based on 88/12% ground beef, so if your beef is slightly different, your macros may be a little different as well. Regardless of fat content, the net carbs should stay the same! It’s hard to go wrong with crackslaw.
