Fresh is Best!

For the holidays, we got a small rosemary plant as a gift and didn’t hesitate to take a knife to it right away and cook up some low carb rosemary dishes!

One of the recipes we came up with was this keto rosemary apple pork chops recipe! It’s a simple recipe that used a basic, seared pork chop with the added flavors of apple and rosemary. We started it off in the cast iron skillet for that crisp, outer skin and finished it off in the oven until it was perfectly cooked. You don’t get a lot of sweetness on a keto diet, so when you allow yourself some fruit, you can really appreciate its natural sweetness. The small amount of sliced apple we used while baking these pork chops added some amazing sweetness that complimented the robust flavor of the pork very well. The way the apple denatured a bit in the high temperature of the oven created an amazing texture compared to the tough pork. And of course, the fresh-cut rosemary scent filled our kitchen the second we put it in the oven. It was the perfect combination for pork chops!

We also whipped up a quick apple cider vinaigrette to enjoy with the pork chops. It played off the baked apples in the dish and added some moisture to the chops.

Apple Cider Vinaigrette
Instructions
  1. Heat up a cast iron skillet in a 400°F oven while you prep your pork chops.

  2. Pat each pork chop dry with a paper towel and rub with olive oil and your seasoning.

  3. Take your cast iron skillet out of the oven and set it onto the stove on high heat. Sear each side of your pork chop for about 2 minutes.

  4. Then lay your apple slices and rosemary sprigs on top of your pork chops and place in the oven for about 10 minutes to finish cooking. The internal temperature should reach 140°F.

  5. While the pork chops are cooking, make your apple cider vinaigrette by mixing all the ingredients together. Add your olive oil last. Slowly pour it in while whisking the rest of your vinaigrette to create an emulsion.

  6. Once your pork chops are done, pour your vinaigrette over top and serve!
