In our field, desserts are king. Most low carb dieters’ first Google searches are usually in the sweet realm. “How do I make low carb cake/cookies/brownies?” etc. When you start to cut out sugar, cravings will quickly follow. Dessert in Five was hands down, the hardest book we’ve ever made. And we’ve made a 100-recipe cookbook on spiralized recipes alone! With Dessert in Five, more recipes than not had to be remade, reshot and retested to ensure the proper taste, texture and look we were going for. We think we included a good mix of fan favorites like sugar-free Nutella, ice cream, and cakes and unique twists on fancier desserts like creme brulees, mousses, puddings, fudge and nut clusters… but that’s for you to decide!

  1. Melt the chocolate chips on very low heat in a pan with ¼ cup of heavy cream.
  2. In a bowl, beat the cream cheese and erythritol. Note: if you don't have powdered erythritol, simply pulse some granular erythritol in a food processor or blender until it's fine and powdery!
  3. Then, add in the melted chocolate chips, cocoa powder and a pinch of salt. Beat well.
  4. In another bowl, beat the remaining ¾ cup of heavy cream until whipped.
  5. Into 2 cups or serving bowls, layer chocolate, cream, chocolate, cream and top with chocolate chips and/or chocolate shavings.
