We All Scream For Ice Cream!

No one can resist the whimsical tune that the New York ice cream trucks jingle on their way down the block. The Mister Softee theme song is the anthem of childhood summers and sends all the kids running to their parents begging for a dollar to buy an ice cream cone. Even now, when I hear the music creep in from my open window while I work, I’m nostalgic for those hot, careless days when I ran around in the park and only stopped for a ScrewBall.

Even though my metabolism has slowed down and I know better than to eat my weight in frozen sugar, I can’t help with crave that soft, creamy cool treat. I keep a pack of vanilla Breyer’s CarbSmart in my freezer (5g net carbs per 1/2 cup) and add a tablespoon of peanut butter or frozen berries for the most amazing late night treat.
