Ingredients
  • 12 ounces boneless chicken thighs
  • 4 ounces Andouille sausage (sliced)
  • 1/2 small red pepper (chopped)
  • 1/2 small green pepper (chopped)
  • 1 medium tomato (diced)
  • 1/2 cup chicken broth
  • 1/2 cup low carb tomato sauce
  • 2 tablespoons tomato paste
  • 2 cloves minced garlic
  • 1 teaspoon creole seasoning
  • 2 cups riced cauliflower (about 1/2 medium head)
  • 1 tablespoon olive oil
Instructions
  1. Combine the chicken, sausage, and peppers in a slow cooker.
  2. Stir in the tomatoes, chicken broth, tomato sauce, tomato paste, and garlic.
  3. Sprinkle with creole seasoning then stir well and cover the slow cooker.
  4. Cook on low heat for 6 to 8 hours or on high for 3 to 4 hours.
  5. Remove the chicken and shred it then stir it back into the slow cooker.
  6. Turn off the heat and leave the slow cooker covered while you prepare the cauliflower rice.
  7. Heat the oil in a medium skillet over medium heat.
  8. Add the cauliflower and stir to coat with oil then season with salt and pepper.
  9. Cook for 6 to 8 minutes covered, until tender.
  10. Serve the creole chicken and sausage over cauliflower rice. Makes 3 servings.
