Ingredients
  • 1 tablespoon olive oil
  • 8 slices bacon (chopped)
  • 1 small red pepper (chopped)
  • 9 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • salt and pepper
  • 1 cup diced mushrooms
  • 1/2 cup fresh chopped basil
  • 1 cup shredded mozzarella cheese
Instructions
  1. Preheat the oven to 350°F.
  2. Heat the oil in a medium ovenproof skillet over medium-high heat.
  3. Add the bacon and cook until browned then stir in the red pepper – cook until tender.
  4. Whisk together the eggs, heavy cream, and parmesan in a medium bowl then season with salt and pepper.
  5. Stir the mushrooms into the skillet and cook for 1 minute then stir in the basil and sprinkle with mozzarella cheese.
  6. Pour in the egg mixture, using a spatula to lift the ingredients so the eggs run under.
  7. Bake for 6 to 8 minutes then broil for 5 minutes to brown the top. Slice to serve.
