Ingredients
  • 2 large eggs
  • 1 tablespoon heavy cream
  • 1 tablespoon butter
  • 2 ounces shredded cheddar cheese
  • 1/4 cup diced mushrooms
  • 1/4 cup diced tomatoes
  • 1/2 cup fresh baby spinach (chopped)
  • salt and pepper
Instructions
  1. Whisk together the eggs, heavy cream, salt, and pepper in a small bowl.
  2. Melt the butter in a medium skillet over medium heat.
  3. Sprinkle the cheese evenly over the bottom of the skillet and cook until it is bubbling.
  4. Pour the egg mixture into the skillet and cook for 2 to 3 minutes without disturbing.
  5. Sprinkle the mushrooms, tomatoes, and spinach over half the omelet.
  6. Cook for another 2 to 3 minutes until the egg is almost set then fold it over itself.
  7. Let it cook until the egg is set then slide onto a plate to serve.
