Ingredients
  • 1 pound fresh tomatoes
  • 4 cloves garlic (peeled)
  • 1/4 cup olive oil
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • salt and pepper
Instructions
  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Core the tomatoes and place them on the baking sheet with the garlic cloves.
  3. Drizzle with oil then season with salt and pepper and roast for 30 minutes.
  4. Transfer the tomatoes and pan juices to a blender and add 2 cups of broth.
  5. Blend smooth then strain the mixture into a large saucepan.
  6. Whisk in the remaining chicken broth and cream then simmer on medium heat for 10 minutes.
  7. Adjust seasoning to taste then serve hot.
