A summer salad in any season!

Paleo Friendly RecipeHere’s a dish that’s gained popularity over the last few years. This summer salad is sweet all around with pops of tang from the feta cheese and raspberry vinaigrette. To top off a great salad, we’re going to throw in omega-3 packed walnuts instead of dry, crusty croutons.

While this summer salad isn’t exactly low carb or keto (what with all the fruits and sweet vinaigrette), we can classify it as paleo. If you’ve cut out cheese from your paleo diet, leave the feta out! Otherwise, enjoy a piece of all-natural, grass-fed cow’s cheese and read more about cheese on a paleo diet here.

Instructions
  1. Cut a medium chicken breast into cubes and cook on a pan. Put the cooked chicken on a plate on the side to let cool off a bit.
  2. Chop, dice and crumble your ingredients into a deep bowl and drizzle your dressing.
  3. Throw in the chicken and dressing and toss!
