A summer salad in any season!
Here’s a dish that’s gained popularity over the last few years. This summer salad is sweet all around with pops of tang from the feta cheese and raspberry vinaigrette. To top off a great salad, we’re going to throw in omega-3 packed walnuts instead of dry, crusty croutons.
While this summer salad isn’t exactly low carb or keto (what with all the fruits and sweet vinaigrette), we can classify it as paleo. If you’ve cut out cheese from your paleo diet, leave the feta out! Otherwise, enjoy a piece of all-natural, grass-fed cow’s cheese and read more about cheese on a paleo diet here.
We purchased our dressing from an awesome shop in Chelsea Market called The Filling Station. Here’s a quote from their website that summarizes them pretty well:

We specialize in all specialty oils, vinegars and rare salts, both traditional and infused, as well as craft beer both local and imported. We strive to be environmentally friendly and encourage our customers to reuse our bottles and jars and receive a 10% discount on refills while saving the planet at the same time.
And that’s not even the best part. You can sample everything in the shop. They’ve set out tiny cups and spoons to sample any liquid or salt before buying. They’ve got exotic flavors of salt ranging from fruity to spicy and everything in between. The olive oils are infused with both expected and unexpected flavors; the kinds of vinegar pack a surprising punch while still registering each distinct flavor perfectly. Check them out next time you’re browsing Chelsea Market!
Here’s how to make our chicken and strawberry summer salad:
- 1 chicken breast
- 2 cups spinach
- 6 strawberries diced
- 3/4 cup blueberries
- 1/2 cup walnuts chopped
- 3 tbsp feta cheese crumbled
- 3 tbsp raspberry balsamic vinegar
- Cut a medium chicken breast into cubes and cook on a pan. Put the cooked chicken on a plate on the side to let cool off a bit.
- Chop, dice and crumble your ingredients into a deep bowl and drizzle your dressing.
- Throw in the chicken and dressing and toss!
