Ingredients
  • 4 boneless chicken breasts about 6 ounces each
  • 1/4 cup cream cheese
  • 1 cup frozen spinach thawed and drained
  • 2 strips bacon cooked and chopped
Instructions
  1. Preheat the oven to 350°F and lightly grease a baking dish.
  2. Use a sharp knife to cut a slit in the side of each chicken breast – cut most of the way through but leave enough for it to hold together.
  3. Beat the cream cheese with a hand mixer until creamy then stir in the spinach and bacon.
  4. Spoon the mixture evenly into the chicken breasts and use a toothpick to keep them together.
  5. Place the chicken breasts in the baking dish and bake for 30 minutes or until the chicken is cooked through.
  6. Let the chicken rest for 5 minutes before serving.
