- 4 large eggs (separated)
- 3 tablespoons coconut flour
- 3 tablespoons So Nourished erythritol sweetener
- 1 teaspoon baking powder
- 7 tablespoons butter (melted)
- 2 1/2 tablespoons unsweetened almond milk
- 1/2 tsp vanilla extract
- 1 cup heavy cream
- 1 teaspoon ground cinnamon
- 2 to 3 tablespoons So Nourished powdered erythritol sweetener
- Whisk the egg whites in a bowl until stiff peaks form.
- In a separate bowl, whisk together the coconut flour, granulated erythritol, baking powder, and egg yolks.
- Whisk in the melted butter until well combined then stir in the almond milk and vanilla until smooth.
- Fold in the egg whites gently so as not to knock out the air.
- Preheat and grease a waffle iron then cook the waffle batter according to the manufacturer’s instructions.
- Prepare the cinnamon cream by whisking the heavy cream to stiff peaks.
- Whisk in the cinnamon and sweeten to taste with powdered erythritol.
- Spoon the cinnamon cream over the warm waffles to serve.
