Instructions
  1. Preheat the oven to 400 degrees Fahrenheit and grease a 6-cavity donut pan with coconut oil spray.
  2. In a large bowl, beat the cream cheese, olive oil, cream eggs, stevia and extract using a hand mixer until smooth and fully incorporated. Set aside.
  3. In a small bowl, whisk together the coconut flour, cinnamon, baking powder, xanthan gum, and salt using a whisk, Add the dry mixture to the wet ingredients and combine using the hand mixer. Fill the greased cavities of the donut mold to the brim, making sure not to overfill.
  4. Bake for 25 minutes, until the donuts are puffed up and a toothpick comes out clean.
  5. Meanwhile, put the ingredients for the topping on a plate and combine using your fingers. After removing the donuts from the oven, allow to cool in the pan for 5 minutes then toss them, one at a time, in the cinnamon-sugar mixture. Set the coated donuts on a wire baking rack to cool for an additional 10 minutes prior to eating.
  6. Store leftovers in a sealed container in the refrigerator for up to 4 days.
