Easy, Flavorful, Fall Inspired Pork Chops

In this recipe, we explore the sweeter side of pork chops and enhance the fall like flavors that pork can take on. The first ingredient that is worth noting is monk fruit sweetener. While many people on a keto diet may be very familiar with monk fruit, others may still be learning about this incredible, low carb sweetener. Monk fruit is also known as luo han guo or Buddha fruit and it is grown in Southeast Asia. It has long been the center of traditional Chinese medicine as it has many antioxidant, healing properties. The fruit has many natural sugars and to make a sweetener, the seeds and skin of the fruit are removed and the fruit is crushed to remove the juice. The juice is then dried into a concentrated powder that is between 100 and 250 times sweeter than granulated sugar.

Instructions
  1. Place the coconut oil in a large skillet and heat over medium heat.
  2. Sprinkle the pork chops with the salt and pepper and then add to the preheated pan. Cook for 5 minutes.
  3. Flip the pork chops then add the monk fruit, cinnamon, nutmeg, cloves and vinegar over the top of the pork chops. Stir gently and move around the pork chops a little bit in the pan to let the juices get underneath.
  4. Cook for another 4 minutes.
  5. Remove the pork chops from the pan and place on 4 plates. Drizzle any remaining juices over the top and serve while warm *A nice fresh kale salad is a perfect side dish!
