Ingredients
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 2 tablespoons fresh chopped basil
  • 2 tablespoons fresh chopped cilantro
  • 1 tablespoon fresh chopped dill
  • 6 medium roma tomatoes (chopped)
  • 1/2 small red onion (sliced thin)
  • 2 ounces fresh mozzarella (chopped)
  • salt and pepper
  • fresh grated Parmesan
Instructions
  1. Whisk together the olive oil, lemon juice, white wine vinegar, and herbs in a large bowl.
  2. Toss in the tomatoes, onions, and mozzarella then season with salt and pepper.
  3. Cover and chill until ready to serve – garnish with fresh grated Parmesan.
