Hearty, Low Carb Cheeseburger Soup
Everyone loves a good cheeseburger. One bite of juicy, tender meat covered in melting cheese…it just can’t be beat! However, there is a new way to enjoy a good cheeseburger and that is by eating cheeseburger soup. No making burger patties, no need for any high carb buns, just a perfect soup that will both satisfy your need for a burger and also warm your belly with a hearty, tasty broth. It’s like the best of all worlds!
Of course, when we set out to make our first cheeseburger soup, we had to make sure it was also keto approved. We can’t have any carbs spoiling our soup! Luckily, cheeseburger soup is generally low in carbs (unlike regular cheeseburgers which usually require a high carb roll). To make the soup, you will need:
- Ground beef
- Onions
- Garlic
- Beef broth
- Diced tomatoes
- Cream cheese
- Shredded cheddar cheese
- Milk
- Bacon
- Seasonings and herbs
The bacon in the recipe is optional but it definitely puts this soup into the “incredible” category. When you use the bacon, it is more like a bacon cheeseburger too- way better! And extra protein and fat from the bacon is welcomed on the keto diet. We recommend keeping the bacon.

The cream cheese helps make the soup extra creamy and thick while the shredded cheddar cheese brings that classic cheeseburger flavor. Both kinds of cheese add a good amount of fat which is needed on a keto diet. This soup will certainly give you some healthy fats that your body can then use as fuel. You can even use heavy cream in place of milk for an extra hearty bowl of cheeseburger soup.
When scrolling down the ingredient list, you may notice Lawry’s seasoning. If you have never used this seasoned salt, you should definitely give it a try. We use it in almost every burger recipe, lots of meatloaves and, of course, in this soup. It is just the perfect blend of seasoning and compliments ground beef well. Lawry’s is essentially salt, paprika, turmeric, onion powder and garlic powder. The company has found the perfect balance of these spices and made it super easy to season this soup! Of course, if you do not have Lawry’s on hand, simply use regular sea salt in it’s place and the soup will still be pretty darn great. You don’t’ always need fancy ingredients to make something delicious!
Once you have gathered all your ingredients for the keto cheeseburger soup, you are ready to start cooking! The beef, onion and garlic are browned in a big pot. The beef broth, tomatoes, Worcestershire sauce, parsley, mustard powder and Lawry’s salt are then mixed in. After that, the soup just needs to simmer, allowing the flavors to blend together to perfection. Try tasting the soup at the beginning of the simmering time and again at the end. You will be shocked by how much flavor develops just by slowly simmering the soup!
Cream cheese, milk and cheddar cheese are mixed into the broth and then served with the bacon crumbled over the top. Sounds like a bowl of cheeseburger goodness! - 1 pound ground beef
- 1/2 cup diced onion
- 2 tbsp minced garlic
- 4 cups beef broth
- 1 can diced tomatoes (15 ounces)
- 2 Tbsp Worcestershire sauce
- 1 Tbsp fresh chopped parsley
- 1/2 tsp dry mustard powder
- 1 tsp Lawry's Seasoning salt
- 1/2 cup cream cheese
- 2 cups shredded cheddar cheese
- 1 cup milk
- 8 slices bacon (Cooked, chopped)
- Place the ground beef, diced onion and garlic in a large pot and heat over medium high heat. Use a spatula to break up the pieces of beef as they cook. Cook until the beef is completely browned then drain and discard the extra grease in the pot.
- Pour in the beef broth, tomatoes, Worcestershire sauce, mustard powder, chopped parsley, Lowry’s seasoned salt. Stir and bring the soup to a simmer.
- Let the soup simmer for 30 minutes, stirring occasionally.
- Add the cream cheese, milk and cheddar cheese to the pot and stir. Keep stirring until the cheese has melted and the soup looks thick.
- Scoop the soup into 6 bowls and sprinkle each with some of the chopped bacon. Serve while hot!
