Super Simple Sausage Keto Dinner

I absolutely love to cook but I don’t always have time to spend hours in the kitchen, I wish I did! But most nights, I have to figure out how to make dinner in just a matter of minutes. Of course, it also needs to be low carb. Oh, and it needs to be delicious. Tasting good is always top priority!

For those busy nights, I am a big fan of sheet pan recipes. These are recipes that are made entirely on one pan, baked in the oven and ready to eat in no time. Sheet pan dinners are also amazing because they are so versatile. You can make tons of great meals using this simple toss and bake method. Here is a look at my super easy, low-carb sausage sheet pan dinner. I’ll walk you through how I like to make it but keep in mind that you can easily swap out some of the veggies I like for your favorites. Just be sure they are keto-approved!

Keto Sausage Sheet Pan Dinner

To begin with this keto sausage dinner, I slice my smoked sausage into pieces about 1 inch thick. I place the sliced sausage on a rimmed, lined sheet pan then I add the sliced peppers, broccoli florets, radishes and onions to the pan as well. Try to make all the veggies approximately the same size so they all bake at the same rate. I know it is hard to make a broccoli floret look the same as a bell pepper slice but try to keep the overall size similar. Don’t leave the broccoli huge and then mince the bell pepper! If you choose to add any other veggies to the pan, keep this in mind as well.

Once you have the sausage and veggies on the tray, drizzle some olive oil over everything and season with salt, pepper and Italian seasoning. If you want to make the sausage sheet pan dinner a little spicy, sprinkle about ¼ teaspoon of crushed red pepper flakes on the dish as well. Toss the veggies in the oil and spices, coating everything on the tray in the seasonings. Once you are done, the whole meal is essentially done too! Pop the tray into the preheated oven and bake!

Low Carb Sausage Sheet Pan Dinner

You can also use pork sausage, beef sausage or chicken sausage in the recipe. All will work well and taste great. Asparagus spears, cauliflower florets and zucchini slices are good veggie additions, too. Cut the recipe in half and make 2 quick servings for you and your spouse. Or triple the recipe, baking it on three big pans, and you will have enough for a whole party!

Ingredients
  • 1 pound smoked sausage, sliced
  • 1 yellow bell pepper, sliced
  • 4 cups broccoli florets
  • 1 cup halved radishes
  • 1/2 cup chopped onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 1 tbsp fresh chopped basil
Instructions
  1. Preheat your oven to 400 degrees F and line a rimmed sheet pan with foil.
  2. Place the sausage, bell pepper, broccoli, radishes and onions on the pan and toss.
  3. Drizzle the olive oil over the pan then sprinkle with the salt, Italian seasoning and black pepper. Toss everything together again.
  4. Bake the pan for 20 minutes.
  5. Divide the sausage and veggies between plates and sprinkle with the fresh chopped basil. Enjoy while hot.
