Easy Keto Meatloaf

I am obsessed with my slow cooker. I literally plan so many meals around using this one appliance and I am not ashamed of that at all. The slow cooker is definitely a busy cook’s best friend! If you have a slow cooker, you probably are already a big fan. If you are new to the world of slow cooking, Welcome! And get ready to fall in love with a kitchen appliance.

You can make so many things in a slow cooker with very little effort. You can make fantastic soups by chopping veggies, adding some broth and turning your slow cooker to low heat. You can easily whip up a beautiful, tender pulled pork by just covering the pork in sauce and leaving the slow cooker on for a few hours. It is just amazing how flavorful a meal can be without spending hours prepping and cooking.

Low Carb Slow Cooker Meatloaf

Of course, when you are following a low carb diet, you do need to modify some of your favorite slow cooker recipes. You have to make sure they are keto-approved and also slow cooker approved. Impossible? Not at all! I have many many keto dishes in my slow cooker and this one right here is definitely one of my favorites. My slow cooker meatloaf is keto friendly and also ideal for anyone who wants a hearty, tasty meal in a hurry.

The recipe starts by lining the bowl of your slow cooker in foil. This step is actually not 100% necessary. I like to line the bowl with foil because it makes it very easy to lift the cooked meatloaf out of the slow cooker once it is done. You can just pull the foil straight up and the whole thing comes out cleanly. However, if you want to skip the foil, you can definitely bake the meatloaf right in the bowl.

Once your slow cooker is prepped, all you need to do is mix the ingredients together. I make a sweet sauce using So Nourished GOLD and Rao’s tomato sauce. The golden erythritol sweetener gives the tomato sauce a brown sugar taste that goes so well with the meatloaf. I always use Rao’s tomato sauce because it is much lower in carbs than other sauces. There are no added sugars or hidden carbs in the jar to worry about.

Slow Cooker Meatloaf

The rest of the ingredients are mixed together until combined. I use my hands to mix the meat, really getting everything blended well.  Place the meat mix into the slow cooker and shape it into a nice loaf. Spread the sauce over the top and the meatloaf is ready to cook! Set your slow cooker to low heat and come back in 4 hours to a perfectly cooked, flavor packed meal.

  1. Line the bowl of your slow cooker with foil and spray it lightly with cooking spray.
  2. In a small bowl, mix together the tomato sauce and So Nourished GOLD
  3. In a large bowl, mix all of the remaining ingredients together. Place the meatloaf mix into the slow cooker and shape into a loaf.
  4. Spread the tomato sauce mix over the top of the meatloaf.
  5. Cover and set the slow cooker on low then cook for 4 hours.
  6. Gently lift the foil out of the pan then slice the meatloaf and serve while hot.
