Exciting Low Carb Pizza Casserole

I am a strong believer that all pizza is amazing. You can give me a big regular slice of pie, you can hand me a pizza calzone or you can give me small pizza bites. I will devour them all. I just think you can’t go wrong with pizza, no matter what form it comes in.

Of course, there are pizza recipes that are not so great. While I always love pizza, I have definitely had my fair share of sub-par pizzas in my day. Not everyone can make a great, cheesy pie! This is especially true when you are trying to enjoy keto pizzas. Making a pizza low carb adds a whole new element of difficulty.

A great keto pizza is not impossible though. I have created many low-carb pizzas and pizzas dishes that are really fantastic. Some of which taste just like a regular, high-carb pizza. It is all about the ingredients and preparing the pizza in the right way.

Low Carb Pizza Casserole

Making a low-carb pizza, or any pizza for that matter, can be a little time-consuming. You have to make the dough, let it rise, make the sauce, bake the pizza….it’s not a very quick process. So what should you do when you are craving a big slice of pizza but don’t have a lot of time to spend in the kitchen? Make a keto pizza casserole, of course!

Pizza casserole is like a pizza layered into a casserole dish. It has all of your favorite pizza flavors but served up on a plate like a slice of lasagna. There is actually no crust involved in pizza casserole. That is part of the beauty of the recipe. You don’t need a pizza crust to make a fantastic pizza dish. Instead of a crust, we layer deli-sliced ham into the casserole dish to help give the casserole a little more heartiness. Ham also just tastes delicious along with other pizza ingredients. It is salty and a little sweet. It is also low carb! Be sure not to choose honey-baked ham when you are at the deli counter as that kind of ham does have some secret hidden carbs. Regular, roasted ham will be perfect!

When you make a delicious pizza, you need a delicious pizza sauce. We always opt for Rao’s tomato sauce which is low carb and quite flavorful. It has a nice herby taste that we really enjoy in this recipe. You can use any of your favorite keto marinara in the recipe. You can even make your own keto tomato sauce. We have a great recipe here if you want to give it a try! Triple the batch and freeze some of the sauce for later. Then you’ll be very prepared for your next pizza craving.

Ingredients
  • 10 slices deli ham
  • 1 cup Rao's tomato
  • 1 pound ground beef
  • 3 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 Tbsp Italian seasoning
  • 20 slices pepperoni
Instructions
  1. Preheat your oven to 350 degrees F and grease a 9x13 casserole dish.
  2. Brown the ground beef in a large skillet, breaking up the beef with a spatula as it cooks to make small crumbles.
  3. Mix the ground beef and tomato sauce in a large bowl.
  4. Cover the bottom of the casserole dish using 5 of the ham slices. They should overlap a little.
  5. Sprinkle the ground beef and marinara mix over the ham, covering the bottom of the pan completely as well. Try to make the beef as even as possible.
  6. Sprinkle 1 ½ cups of the mozzarella and ½ cup of cheese over the ground beef layer.
  7. Top the cheese with another layer of ham, followed by another layer of ground beef and then top with the remaining cheeses.
  8. Place the pepperoni slices over the top of the casserole.
  9. Bake for 20 minutes in the preheated oven. The cheese should be lightly browned on top and bubbling. If the casserole begins to get too dark, loosely cover with a piece of foil to continue baking without burning the cheese.
