Ingredients
  • 1 tablespoon fresh chopped rosemary
  • 1 tablespoon fresh chopped thyme
  • 2 teaspoons minced garlic
  • 1 teaspoons whole peppercorns
  • 1 teaspoon dried fennel seeds
  • 8 bone-in chicken thighs
  • salt and pepper
Instructions
  1. Combine the rosemary, thyme, garlic, peppercorns, and fennel in a small bowl.
  2. Trim the chicken as needed with a sharp knife then season with salt and pepper.
  3. Sprinkle the herb rub over the chicken and press into both sides.
  4. Place the chicken on a plate then cover and chill for at least 2 hours up to overnight.
  5. Remove the chicken from the fridge 15 minutes before grilling.
  6. Preheat the grill to medium-high heat and grease the grates with olive oil.
  7. Place the chicken on the grill skin-side down and cook for 6 minutes.
  8. Turn the chicken and cook for another 6 to 8 minutes until cooked through.
