Ingredients
Salad
  • 4 cups arugula
  • 6 ounces smoked salmon
  • 1 avocado
  • 1/2 red onion, sliced
Dressing
Instructions
  1. Place the vinegar, olive oil, erythritol, lemon juice, raspberries, salt and pepper in a food processor and pulse until smooth.
  2. Place the arugula in a large bowl and toss with the raspberry dressing. Add the onion and toss again.
  3. Place the arugula mix in two bowls and top with the salmon and avocado slices. Enjoy!
