Pan-Fried Chicken Patties Recipe

Ingredients
  • 4 cups cooked chicken thighs (chopped)
  • 1/2 cup ground flaxseed
  • 1/4 cup diced yellow onion
  • 2 tablespoons nutritional yeast
  • 4 large eggs (whisked)
  • 1/2 teaspoon chili powder
  • 3 tablespoons coconut oil (divided)
  • salt and pepper
Instructions
  1. Place the chicken in a food processor and pulse until finely shredded.
  2. Transfer the chicken to a large bowl and add the ground flaxseed, onion, nutritional yeast, and eggs.
  3. Stir in the chili powder, salt, and pepper and mix until well combined.
  4. Divide the mixture into 8 even portions and shape into patties by hand.
  5. Heat half the oil in a large skillet over medium heat.
  6. Add four of the patties and cook until browned on the bottom.
  7. Flip the patties and cook until they are cooked through then remove to a plate.
  8. Repeat with the remaining oil and chicken patties.
  9. Serve the chicken patties on keto bread or lettuce wraps with your choice of toppings.
