  • 1 pound boneless, skinless chicken breast (cubed)
  • 1 cup chopped white onion
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 28 ounces chicken broth
  • 2 tbsp chopped jalapeño
  • 1 red bell pepper (chopped)
  • 2 tsp ground cumin
  • 1 tsp adobo seasoning
  • 1 tsp sriracha
  • 1 tsp cayenne pepper
  • 1 cup cream cheese (softened)
  • 1 cup shredded Monterey jack cheese
  1. Add the olive oil to a large pot and heat over medium high heat.
  2. Add the chopped chicken breast and chopped onions to the pot and cook the chicken for about 8 minutes, stirring occasionally to brown on all sides.
  3. Add the chopped bell pepper and jalapeno to the pot and stir. Cook for another 5 minutes to soften the peppers.
  4. Add the cumin, adobo seasoning, sriracha, cayenne, cream cheese and chicken broth and stir.
  5. Bring the chili to a boil and then reduce the heat so that the chili is just simmering.
  6. Stir in the shredded cheese. Stir well until all the cheese has melted.
  7. Divide between bowls and enjoy while hot.
