Chorizo and Eggs Recipe

Ingredients
  • 1 teaspoon olive oil
  • 1/2 small yellow onion (chopped)
  • 2 (3-ounce) chorizo sausages
  • 4 eggs
  • salt and pepper
Instructions
  1. Slice open the sausage casings and spoon the meat into a bowl then set aside.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the onions and cook for 3 to 4 minutes until browned then stir in the sausage.
  4. Cook until the sausage is just cooked through then spread it evenly in the skillet.
  5. Crack the eggs into the skillet and season with salt and pepper.
  6. Break up the yolks a little bit with a wooden spoon, stirring the eggs into the sausage.
  7. Cook until the egg whites are firm and the yolks are done to your liking. Serve hot.
