Bacon Cheeseburger Pie Recipe

Ingredients
  • 6 slices of bacon (coarsely chopped)
  • 1 pound ground beef (80% lean)
  • 3 cloves minced garlic
  • 1 1/2 cups shredded cheddar (divided)
  • 1/2 (8-ounce) package cream cheese (softened)
  • 6 large eggs
  • salt and pepper
Instructions
  1. Lightly grease the inside of a slow cooker with cooking spray.
  2. Cook the bacon in a large skillet over medium-high heat until crisp then drain on paper towel.
  3. Reheat the skillet and add the ground beef – cook until browned, breaking it up into chunks with a wooden spoon.
  4. Stir in the garlic then season with salt and pepper and cook 1 minute more.
  5. Spoon the mixture into the slow cooker and top with half the bacon and 1 cup shredded cheese.
  6. Beat together the cream cheese and eggs with a hand mixer then spoon it over the beef.
  7. Cover and cook on low for 3 ½ to 4 hours until the center of the pie is just set.
  8. Sprinkle in the remaining cheese and bacon then cook for another 10 minutes until it is melted.
  9. Cut the bacon cheeseburger pie into slices to serve.
