Accio Butterbeer!

I’ve been itching to make this recipe for months! I’m a huge Harry Potter fan, having read all the books multiple times, watched the marathons, visited The Wizarding World twice, seen the NY Exhibition, seen Potted Potter off-broadway, owner of 3 wands and a 5-foot by 6-foot movie poster…. I could go on for days… Butterbeer was something I thoroughly enjoyed when I visited Orlan- I mean Hogsmeade. After I started my keto diet though, butterbeer was understandably off the list (not that it was sold by muggles here in NY anyway).

But I’ve been eyeing that diet cream soda in my supermarket for a while and finally looked up the recipe for the authentic butterbeer: the main ingredient was cream soda! Substituting sugar and getting some butter or butterscotch flavoring from Amazon would be easy. I still had my butterbeer mug from Hogsmeade and the rest of the ingredients on hand. Yes!

The butterbeer turned out very similar to the real deal. Make sure to drink it nice and cold, the butterbeer in Hogsmeade was practically a slushy. You can also add some rum flavoring to the cream layer,
I hear it’s a good touch.

If you’d like to make this an alcoholic drink, try to find some butterscotch Schnapps and cream flavored vodka. I’m not sure how many carbs the Schnapps would add to the drink but it sounds delicious.

  1. Pour 2 tablespoons of sugar free butterscotch syrup into a glass and then pour the cream soda over.
  2. Then combine the heavy cream and vanilla in a mixing bowl and beat either manually or with an electric hand mixer until stiff peaks form.
  3. Add in powdered erythritol (if you don't have powdered, simply pulse the erythritol a few times in a Magic Bullet or blender) and fold in.
  4. Spoon the sweet cream onto the butter beer and enjoy!
