The Epitome of Low Carb Rich Desserts!

With a twist, of course!

One of our favorite Japanese restaurants in London, Oka Robata, broke our low carb streak. We were doing so well, staying on track, keeping our carbs nice and low when all of a sudden, a whiff of something warm, gooey and flavorful hit our noses. A waiter walked by with 2 steaming pots of something heavenly. We flipped through our menus to find exactly what was floating around when our eyes hit the cookie dough desserts section.

We ordered a White Chocolate Chip Green Tea Mug Cake for dessert and regretted nothing. The restaurant said it was a baked cookie dough, of which they had 3 varieties. The matcha flavor was their most popular, by far. It was a rich, decadent, flavorful dessert that we couldn’t get out of our minds. We loved it so much, it was the first recipe we decided to recreate as low carb when coming back home to the States.

We did a pretty good job of it. It has that dense, gooey texture you might find in a glutinous dessert but none of the sugar!

Low Carb White Chocolate Green Tea Mug Cake

A few notes on sugar-free white chocolate chips:

We used a store-bought jar of white chocolate chips. We found it in a small keto cafe, Simply Keto in Berlin and doubt it’s available in the US. We scoured Amazon.com for a brand but were unsuccessful. However, we do know a few great-sounding sugar-free white chocolate chip recipes from our blogger friends:

Pick your favorite recipe and make a batch for yourself. To create chips, we recommend either using a silicone mold, like in this post, or making a bar and chopping it into chips/chunks. Then, FREEZE the chips to ensure they retain their shape when baking. Store-bought chips are usually stabilized for baking. Homemade recipes are a bit more delicate.

Instructions
  1. Make sure to freeze your sugar-free white chocolate chips beforehand to ensure they stay as chips while baking. If you're using store-bought chips, you may skip this step.
  2. Preheat your oven to 350°F. In a large bowl, whisk the erythritol and stevia into the egg, aerating it a little. Then, add in the coconut oil (or melted butter) and vanilla extract and whisk well to combine.
  3. In a large sifter set onto the bowl of wet ingredients, combine the almond flour, matcha powder, baking powder and xanthan gum. Mix and sift into the wet ingredients. Add a pinch of sea salt, then use a silicone spatula to combine everything very well.
  4. Next, fold in the sugar-free white chocolate chips.
  5. Lightly grease a ramekin or baking container of choice. Pour in the mug cake batter and bake for 12 minutes.
  6. Let cool for 5-10 minutes and enjoy!
