  • 2 tbsp butter
  • 1/2 cup chopped onions
  • 1 tbsp minced garlic
  • 2 tbsp fresh grated ginger
  • 1 tbsp garam masala
  • 3 tbsp tomato paste
  • 1 1/2 tsp salt
  • 3 pounds chicken breast, cubed
  • 1 tbsp lime juice
  • 1 cup canned coconut milk
  • 1/4 cup fresh chopped cilantro
  • 2 cups cauliflower rice, cooked
  1. Place the butter in a large skillet and melt over medium heat.
  2. Add the chopped onion and garlic to the pan and cook for two minutes.
  3. Add the ginger, garam masala and salt to the pan and stir. Cook for one minute.
  4. Add the tomato paste and cook for another 2 minutes, stirring occasionally. Pour the mix into the pot of a slow cooker.
  5. Add the chicken breast, lime juice and coconut milk to the slow cooker as well, Stir briefly to coat the chicken in the sauce.
  6. Cover and cook over low heat for 7 hours.
  7. Serve the cooked butter chicken with the cauliflower rice and sprinkle each plate with the fresh chopped cilantro. Enjoy hot.
