Pan-Fried Chicken Patties Recipe

4 cups cooked chicken thighs (chopped)
1/2 cup ground flaxseed
1/4 cup diced yellow onion
2 tablespoons nutritional yeast
4 large eggs (whisked)
1/2 teaspoon chili powder
3 tablespoons coconut oil (divided)
salt and pepper

Place the chicken in a food processor and pulse until finely shredded.
Transfer the chicken to a large bowl and add the ground flaxseed, onion, nutritional yeast, and eggs.
Stir in the chili powder, salt, and pepper and mix until well combined.
Divide the mixture into 8 even portions and shape into patties by hand.
Heat half the oil in a large skillet over medium heat.
Add four of the patties and cook until browned on the bottom.
Flip the patties and cook until they are cooked through then remove to a plate.
