  1. Preheat your oven to 325 degrees F and line a baking sheet with parchment paper
  2. Add the coconut flakes and almond slices to a food processor and pulse until the mix is the texture of oatmeal.
  3. Add the almond flour, baking powder, xanthan gum, cinnamon and salt to the food processor and pulse quickly just to combine.
  4. In a separate bowl, beat the butter and erythritol until smooth and creamy.
  5. Add the egg and syrup to the butter mix and beat to combine.
  6. Add the dry ingredient mix to the butter mix and stir to form a smooth batter.
  7. Scoop the cookie dough onto the prepared tray, making 12 large balls. Flatten the cookie dough gently, using our hand, until they are about ½ inch thick.
  8. Bake the cookies in the preheated oven for about 18 minutes or until the edges just begin to brown.
  9. Remove the tray from the oven and let the cookies cool on the baking sheet and then enjoy!
