Ingredients
  • 3 pounds boneless skinless chicken thighs
  • 1 pound frozen shrimp (deveined and tails removed)
  • 1 pound sausage (cut into circles)
  • 1 red bell pepper, sliced
  • 1 cup chopped white onion
  • 1 cup chopped celery
  • 1/4 cup chopped garlic
  • 6 oz tomato paste
  • 15 oz canned diced tomatoes
  • 1 tbsp Cajun seasoning blend
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp ground black pepper
  • 1/2 tsp xanthan gum
  • 1/2 tsp salt
  • 2 cups chicken broth
Instructions
  1. Place all of the ingredients except for the shrimp in your slow cooker.
  2. Mix and then cover the slow cooker and set the temperature to high
  3. Cook on high for 4 hours.
  4. Add the shrimp to the bowl, mix, cover again and cook for 20 more minutes
  5. Serve while hot!
