Place the mozzarella, almond flour, cream cheese, garlic (if using), parsley, baking powder and salt in a medium sized, microwave safe bowl. Stir everything together and then microwave on high for one minute.
Stir the mix well and then microwave for another 30 seconds. The cheese should be melted and the dough very thick.
Mix in the egg. Mixing by hand may help you really blend the egg in evenly and make a smooth dough.
Place the dough on a parchment lined baking sheet and shape the dough into an oval loaf about 2 inches thick.
Brush the melted butter over the bread and then sprinkle with the garlic salt if using.
Place in the preheated oven and bake for 15 minutes or until the top of the bread is golden brown.
