Grilled Tomatoes with Apricot Jam

Ingredients
  • 6 medium tomatoes
  • 3 tsp sugar-free apricot jam
  • 2 tsp dried oregano
  • 3.5 oz grated gouda cheese
  • 1.5 oz watercress for garnish
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste
Instructions
  1. Pre-heat the oven to 180°C/360°F.
  2. Cut the tomatoes in half and place on a lightly greased baking tray.
  3. Spread a little bit of jam on each of the tomato slices.
  4. Then, sprinkle dried oregano on top.
  5. Grate the cheese over tomatoes and place in the oven for 25 minutes or until cheese is golden.
  6. Now garnish each slice with watercress.
  7. Drizzle with olive oil and finish with cracked black pepper.
  8. Enjoy!
