  1. Whisk together the almond flour, erythritol, cocoa powder, and salt in a medium bowl.
  2. Stir in the butter and vanilla extract until it comes together in a dough.
  3. If needed, add water 1 tablespoon at a time until the mixture is no longer crumbly.
  4. Roll into 24 1-inch balls and place on a parchment-lined baking sheet – freeze 1 hour.
  5. Combine the chopped chocolate and coconut oil in a double boiler over low heat.
  6. Stir until melted and smooth then remove from heat.
  7. Dip the truffles into the chocolate until coated then place on the baking sheet.
  8. Repeat until all truffles are coated then chill until hardened.
