  1. Preheat the oven to 300°F and line a square baking dish with parchment.
  2. Combine the almonds, coconut, pecans, and sunflower seeds in a food processor.
  3. Pulse the mixture until finely chopped and crumb-like, like granola.
  4. Pour the mixture into a bowl and stir in the cranberries and a pinch of salt.
  5. Melt the butter in a saucepan over low heat then whisk in the erythritol and vanilla extract.
  6. Pour the mixture over the granola and stir until well combined.
  7. Press the mixture into the prepared dish, compacting it as much as possible, and bake for 25 minutes.
  8. Cool the mixture in the pan completely then remove and cut into 16 bars.
