  1. Combine the chia seeds, almond milk, cinnamon, nutmeg, ginger, erythritol and grated carrot in a bowl. Stir to combine.
  2. Let the chia seeds soak for about 30 minutes or more, stirring occasionally. The mixture will thicken as the seeds absorb the moisture.
  3. Stir in the Greek yogurt.
  4. Divide between bowls then chop the toasted pecans and use them as a garnish.
  5. Enjoy cold!
